Discussing Thanksgiving Dinner with Mr. Lyons' Executive Chef Jon Butler


Celebrate Thanksgiving with a Mr. Lyons’ Gather@Home dining experience and enjoy a holiday-inspired, traditional Thanksgiving meal curated by Chef Jon Butler.


Chef Jon Butler is a California native with a family history in the culinary world who recently joined the F10 family. He was born and raised in the Imperial Valley of Southern California. At a very young age Chef Jon was surrounded by flourishing seasonal produce due to his family having roots in farming the extremely hot and desolate desert area. At age 20 Jon decided to attend the California School of Culinary Arts to pursue a career where he could continue to broaden his knowledge of seasonal ingredients and cooking techniques.

Throughout the next 11 years Chef Jon worked at a variety of restaurants including, Fig Restaurant in Santa Monica, 71Above in downtown LA and The Rose Venice where he had the freedom to perfect his techniques with access to wood fire pizza, pasta, and beautifully grown southern California produce that Jon had grown accustomed to using. Having worked in LA throughout the pandemic and as 2021 approached, Jon yearned for a space closer to nature. Always wanting to move back to the desert, he found his place in taking on the Executive Chef position at Mr. Lyons steakhouse in Palm Springs CA. A landmark on the Palm Springs strip, a restaurant that needed a modern twist for the ever-changing clientele. 

We sat down with Chef to discuss his inspiration for a few of the dishes that will be served at Mr. Lyons’ 3 course Thanksgiving dinner on Thursday, November 25th 2021.

F10 - What was the inspiration for this dish?

Chef Jon - This dish is inspired by the holiday itself as well as using as many seasonal ingredients as possible to really have this dish taste like fall.

 Wild Mushroom Stuffing

F10 - What makes this dish special?

Chef Jon - The mushrooms which grow wild in very specific conditions, and all have a unique flavor are what make this dish special. This year we will be using chanterelle, porcini, cauliflower, and bears tooth mushrooms if the foragers can find them all for us to use around Thanksgiving time.

Candied Yams with Bruleed Marshmallow

F10 - What inspired this dish and what makes it unique?

Chef Jon - This dish was inspired by one of my favorite dishes that my grandmother would cook during the Thanksgiving holiday. The buttery sweet yams that have the slightly crunchy bruleed marshmallows on top of them really make the dish stand out.

F10 - Share with us your fondest memory of Thanksgiving. 

Chef Jon - My fondest memory of thanksgiving is watching my grandmother cook all day when I was young and enjoy the magic of what she was preparing in the early afternoon. 

F10 - What are you thankful for this year?

Chef Jon - I'm thankful for my wife, (Laura) my French bulldog Nico, and my recent move to Palm Springs.
